About Natamycin

Natamycin is a polyene antifungal produced by fermentation of Streptomyces. It acts on yeasts and moulds at the food surface and does not affect flavour or colour.

Uses and applications

Dairy

Applied to the surface of hard and semi-hard cheeses to prevent mould growth during ripening and storage.

Meat

Applied to the casings of dry-cured sausages and cured meats to stop surface mould.

Beverages

Used in some juices and wines to inhibit spoilage yeasts, where permitted.
