About Pectin

Pectin is a natural polysaccharide extracted from citrus peel or apple pomace. High-methoxyl (HM) and low-methoxyl (LM) types gel under different conditions.

Uses and applications

Jams and confectionery

Sets jams, jellies, fruit fillings and fruit gummies; HM pectin needs high sugar and acid, LM pectin can gel with calcium.

Dairy and beverages

Stabilises acidified milk drinks and fruit juices by keeping proteins and particles in suspension.

Pharmaceutical

Used as a thickener and gelling agent in some oral and medical formulations.
